Chop is just a technique for serving vegetables, frequently with some grains and other stuff mixed in. It's important for birds to eat some vegetables, but the exact way that you serve the vegetables doesn't matter. My cockatiels don't like chopped veggies in a dish, but they like to eat vegetables foraging style, with leaves and other large pieces presented so it looks sort of like a plant is growing there.
Carrots are an excellent vegetable (very high in vitamin A) but they aren't required. Feeding egg is controversial nowadays, and many vets recommend that you don't give it to birds at all. Obesity and atherosclerosis are major health problems for pet birds, and egg yolk is high in fat and cholesterol. Egg white is OK though, it has a lot of protein in it but not much of anything else including zero cholesterol.
