Whole grain crackers
1 3/4 cups whole grain flour /2 = 14 T= 7/8 cup I used oat flour, quinoa flour, kamut flour and Chia flour
1 1/2 cups all-purpose flour /2= 12 T= 3/4cup
1/3 cup coconut oil /2 = 10.56 T = 1/6 cup (I would reduce the oil)
1 cup water /2= 1/2cup
Directions
Prep:10 minutes (more like 20 to 30)
Cook: 25 minutes
Ready In: 30 minutes
Preheat the oven to 375 degrees F (190 degrees C).
In a medium bowl, stir together the whole grain flour, all-purpose flour .
Pour in the coconut oil and water; mix until just blended. This dough is sticky and tough to roll out, be prepared to really coat the rolling pin in flour.
On a lightly floured surface, roll out the dough as thin as possible - no thicker than 1/8 inch. Place dough on an un-greased baking sheet, and mark squares out with a knife, but don't cut through. about the size of cheese its. Prick each cracker with a fork a few times. (I used parchment paper on cookie sheets and rolled them out on the cookie sheet.)
Bake for 20 to 25 minutes in the preheated oven, or until crisp and light brown. Baking time may be different depending on how thin your crackers are. When cool, remove from baking sheet, and separate into individual crackers.

I divided the recipe in half other wise I would have cracker coming out my ears.
my birdies like them. I made them as healthy snack for Bebe , who has Dorito fetish.

My birds refuse to eat anything I bake for them, and want human breads and crackers instead of birdie bread. But if I was to make this recipe I'd reduce the oil too, and I wouldn't use coconut oil. It's not the marvelous health food that it's claimed to be.

my Vet recommend the coconut oil rather then vegetable oil in the original vegetable oil.

Not all vets are scientific thinkers or well informed about nutrition, and there are some who have bought into the coconut oil hype and various other types of pseudoscience. The claims about coconut oil's benefits don't have any serious evidence behind them, and the countries that eat a lot of coconut oil have a high rate of heart disease. Bebe was addicted to Doritos. if he hears you crunching on chips, he wants one. this is a healthier snack for him. and I look at feeding healthier as trying new recipes.

the only time I have seen digestive biscuits (made in UK) on clearance at Kroger. I got interested (never seen them before in US!) what was so digestive about them and bought them. I liked them. Not sure if they are popular in US though
